Getting started: Invoices

Still working on getting everything in order before officially start working. I suffer from paralysis of analysis in a major way.
I'm trying to decide what the best option for invoices should be. Ive researched the forums and found that some like to go with the carbon copy style. Some like to go paperless and email the invoice to the customer (how would you get the signature for disclaimer). Some use a mobile laptop and portable printer and can print an invoice on the spot if needed.
I also dont know what I'm going to do as far as accounting either. Ive read that quickbooks is the way to go and QB also can be used to print an invoice to hand to client if needed. I dont see the point in having carbon copy style invoices and then having to enter data from paper invoices into accounting software at the end of the day although I am more old school and like the idea of carbon copy invoices because I'm computer illiterate lol.
