Anybody set up shop in a medium size shopping plaza with plenty of empty parking area and no security? I am debating wether to try it out. Anyone who has tried please tell me about your experience. I'm thinking maybe just on the weekend. Park the truck and pop up my banners. What do you think?

Its never a good idea to work in a location without the owners permission!
Also the permit questions will come up and trust me the place might not have security but the rent paying ocupants of the center will call the cops.
My father always told me its just as easy to do things the right way as the wrong and sometimes easier.

Call the center and ask its not hard to do. Or convince a service station in the area to let you set up I find $25 or 20% whichever is higher will convince them it really is easy to find a place to set up legit. 8)

I would give it a try as long as you do not leave a mess behind it might be ok, the worst that could happen is you get asked to leave. I would write down the name and number of the property manager and if someone stops you it looks like you were trying to do it legit.
